Ok, if like me you need cheering up then here is a gratuitous bit of pea porn ! It really is soup weather here in the unsunny/unfunny SE of France. Rain, cold, hurly burly windy, (a full monty except the snow) type of day to make a cheerful soup.

Funny thing peas, you either like them or you don't. We happen to love them (except my 8 year old) and this is by far my favourite pea soup recipe. If you love peas then you won't be disappointed, serve in a pretty bowl with any type of bread you want.
Pea and Mint Soup
1 large onion
3 large handfuls of fresh peas in the pod, or use frozen
2 large courgettes
Glug of olive oil
Handful of fresh mint
Chicken stock or vegetable stock
Water to cover
Creme fraiche
Salt and pepper
It's simple, fry the onion, add the peas, courgettes, mint and stock, cook for 20 minutes, blend, add creme fraiche, season and eat, yum ...

Yum, that looks delicious! I am a Pea lover, I've just discovered a super quick and easy Tapas dish - crushed peas with spring onion, mint and feta cheese (though would also be good with goats cheese) - try it, it's a great side dish! x
Funnily enough I was day dreaming about peas with feta today, how spooky is that ? I might try it Rachel but I think I will just pop over the border to Spain and get someone else to make it :-) (not showing off or anything)
