My lovely friend made this Gazpacho for 'soup Tuesday' last week, it was delicious, here's her recipe.
800g fresh ripe tomatoes skinned and chopped (flesh only)
2 spring onions chopped
2 cloves garlic crushed
red pepper deseeded and chopped
10cm cucumber peeled and chopped
4 tablespoons olive oil
1.5 tablespoons white wine vinegar or sherry vinegar
1 tsp fresh basil chopped
salt and black pepper to taste
Blend all ingedients together until smooth. Serve when cold with ice if desired
Garnish - croutons, chopped fresh parsley, chopped hard boiled egg, finely chopped spring onion, finely chopped green pepper, salt and freshly ground black pepper.
