Pomme de Jour - We're Jamming



Mm I've been making jams and pickles over the last couple of weeks. Being a big fan of tomatoes I was delighted to find this recipe on the Marie Claire site, it is delicious and so easy to make.




All you need is :

800 g of beefsteak tomatoes
450 g of granulated sugar
1 vanilla pod

Method:
Wash the tomatoes then plunge them for 10 seconds in boiling water followed by cold water, take the skins off. Cut the tomatoes in half, de-seed and then chop them into pieces. This is lengthy but it's worth taking your time and getting all the skin off and seeds out. Cook the tomatoes with the sugar and split vanilla pod for 30 minutes. After 30 minutes drain the tomatoes and return the syrup separately to the pan to cook for a further 20 minutes. After 20 minutes return the tomatoes to the syrup and cook for another 10 minutes or until the required consistency is obtained. Pop the jam into your prepared sterilized jars with the vanilla pod chopped in half. Delicious with scones !
