Pomme de Jour - Sweet pepper and cashew nut flan

This is my favourite non egg quiche recipe and also my sisters requested meal whenever she and her brood come to stay. Totally yummy I thought I would share it with you.


Recipe

First make the oaty pastry

Oaty Pastry

250g wholemeal flour                                          
100g oats
25g sesame seeds
1/2 teaspoon of dried thyme

Place all these ingredients in a large bowl.

1 teaspoon soy sauce
2 1/2 tablespoons of extra virgin olive oil              


Gradually mix in cold water a little at a time until the pastry blends together but is not too wet. Leave to stand for 10 minutes. Roll out pastry onto a lightly floured surface. When it becomes difficult to roll transfer it to a 30cm non-stick flan ring and push it into shape with your fingers.
Bake in the middle shelf of the oven for 10 minutes, then remove from the oven and leave to cool.


Sweet Pepper and cashew nut filling 

1 red and 1 yellow pepper
1 medium onion sliced
200g cashew nuts
250g spinach leaf, washed
340 ml soya milk
1/2 teaspoon black pepper
1 teaspoon wholegrain mustard
1/2 teaspoon paprika
1/2 teaspoon grated nutmeg
1 teaspoon of salt
200 ml extra virgin olive oil
3 teaspoons of cider vinegar

Roast the peppers in a preheated oven 190/375/GM5 for 20-25 minutes or until the skins begin to turn black. Remove and place in a bowl covered with cling film until cool. Peel off the skins and remove the cores and seeds. Spread the chopped onions and sliced cooked peppers in the pastry case and reserve.

Grind the nuts in a food processor or blender until they are quite fine. Blend in the the spinach with the milk, pepper, mustard, paprika, nutmeg and salt. Slowly add the olive oil and then the vinegar. Pour the spinach and cashew mixture over the peppers and onions, sprinkle with paprika and bake in the centre of the oven for 25 minutes, until the top has slightly browned and the flan is firm to touch. Serve hot or cold.
